Answering my own question, I think I've cracked it - in addition to the
PXA UART support, my kernel also has 8250 UART support (I have some on a
daughter board). I'd got the 8250 UART support compiled in and it seemed
to be messing things up. Rebuilding it as a module brings my console
output back.
